Easy Addictive Radish Dip

Today I present a recipe for super easy, super delicious radish dip. I ate an entire batch of it over the past two days which means a) I will smell like garlic for a week and b) I ate an entire block of cream cheese by myself. I’m not even sorry.

My sister made this dip when she came to visit a zillion years ago. I was confused, because who uses radishes for anything?? They’re like the acid wash jeans of vegetables – they’re always AROUND and sometimes they’re trendy and maybe other people use them for stuff but for most people? No. Just no. Who knew they were actually delicious and spicy and perfect for a crunchy snack? Also, they’re perfect in this dip, which might be the easiest thing you ever eat way, way too much of in one sitting.

Easy Radish Dip

Ingredients:
1 block cream cheese (regular or light)
6-7 medium sized radishes
4 cloves of garlic, peeled

Directions:
Put everything in a food processor, blend until radishes and garlic are minced. Eat with crackers, carrots or more radishes cut into slices.

Add more garlic if you like things super garlicky. Add more radishes to make it a tiny bit healthier (less cream cheese per bite). Double it if you’re making it for a party. Enjoy!

That’s mostly it. In the spring and summer when we can get stuff from the farmer’s market or our CSA they’ll eat a lot more – lettuce, sprouts, beans, peas, zucchini – but winter is long in Connecticut and trying to get in 3 servings a day is like pulling teeth. Considering Evan’s already been on supplements for his iron once (thank goodness we’re done with that!) I’m not above tricking them into eating their vegetables – we’ve done smoothies with hidden spinach, pureed veggies in the tomato sauce and thinly sliced squash in sandwiches and quesadillas, but I’m always looking for extra ways to sneak in nutrition.

So when the people from Voots Veggie-Fruit Tarts reached out, I said we’d love to give them a try.

When I got my package from Voots, I noticed the directions said “ages 4 and up” on them, so I ran the idea of giving them to Evan by my pediatrician. She said it was totally OK and well within the safe limits for vitamin C, especially since he’s almost 4 anyway (OMG! He’s almost FOUR!) and the restriction was probably more about choking rather than ingredients. Evan’s opinion of Voots is that it’s “fun candy”, which I am doing nothing to discourage. I love that they come in little packages so I can throw them in my purse and let him have a “treat” while we’re out. They’d be perfect to put in a lunch box or even bring to work for your OWN lunch – Vitamin C is extra important during cold season!

 We’re going into week 2 of E’s crazy work schedule and so far I’m doing pretty well. The major reason I’m not freaking out is a spot opened up at Evan’s school for Caroline, so as long as I can get the immunization record from the doctor on Monday afternoon she starts school on Tuesday morning! My plan is to burn rubber out of the parking lot cackling maniacally and head for the gym on base, where I get 2 full child-free hours to take a class or restart C25K on a treadmill or just screw around on the elliptical trainer. Preschool isn’t cheap, but neither is a mental breakdown.

I’m not going to lie, dropping Evan off at school on Thursday was the highlight of my week. But it was the highlight of his week too – he’s already asked to go to school three times today (it’s Sunday) and Caroline is begging to go back to the play place. Now that the holidays are over we start the loooooong cold trudge towards spring in New England. It’s the only part of the year I actually hate living in Connecticut, although I do still love the aquarium, seaport and two children’s museums that all have nice, warm, inside activities.

Merry Christmas and Happy Holidays! We made it through the busiest weeks of the year unscathed (well, besides Caroline’s pneumonia and double ear infection, which she has recovered from quite nicely) and now we’re doing as little as possible. It’s easy today, since as I type this a snowstorm is blowing in, making a lazy movie day on the couch practically mandatory.

Without all the twinkle lights and glitter to hide the dust and holes in the walls I’ll have a lot of spring-cleaning to do – and spring isn’t for a long, long, loooong time.
