Sour Cherry Pie

Sour cherry pie is one of the very easiest yet most delicious kinds of pie. The only problem is you need sour cherries. My mother-in-law grows and cans her own, and I’ve been lucky enough to receive several jars over the past few years. But since there is NO WAY I am giving up my stash, you’ll have to track some down yourself. I know Oregon Fruit has tart cherries, so check with their other fruit at your grocery store (or order them from Amazon).

Once you have the cherries in your hot little hands, this recipe is easy as…well, you know.

Sour Cherry Pie

Crust:

2 cups flour
1/2 teaspoon salt
3/4 cup shortening
5-6 tablespoons ice cold water

Throw the flour and salt in a mixing bowl. Toss in the shortening too and then mash it up with a fork until it’s in little pieces. Don’t mix it TOO well, since the little pieces of shortening in the crust is what makes it flaky. Add cold water about a tablespoon at a time until the dough is sticky enough to hold together. Do most of your mixing with the fork but make sure you test it by squishing it together with your hands or you’ll end up adding too much water. Separate the dough into to balls. Roll it out one ball, press into a 9 inch pie plate and crimp the edges. Roll out the second ball and cut into 8-10 1/4 inch wide strips.

Filling

3 1/2 – 4 cups canned tart cherries (approx. 1 quart)
1 cup sugar
1 tsp almond extract
1 tablespoon corn starch

Drain the cherries but save 1 cup of the juice. Combine juice, sugar, extract and corn starch in a small sauce pan and heat until sugar is dissolved and mixture thickens. Pour cherries into the prepared crust and then pour the juice mixture over it. Use the strips of crust to make a lattice top, weaving them over and under. Pinch the edges together all the way around.

Bake at 400 degrees for 50 minutes or until filling it bubbly and the crust is lightly browned.

I SUPPOSE you could also use store bought crust to make this even easier, if you hated deliciousness. And America.

Lemon Blueberry Bars With Coconut Crust

I spent all morning Sunday on Pinterest. That’s pretty much all you need to know to understand the next couple of posts I have planned. Let’s just say I was REALLY hungry afterward.

These are actually more cake-like than the traditional powdered sugar dusted lemon bars – sort of like lemon brownies (these are actually what inspired me try making my own recipe). If you aren’t a fan of coconut, you could easily omit the crust – just watch the bake time closely. And if you don’t happen to have any blueberries, you could leave those out too. But personally, I think this is the perfect combination of sweet, fresh and tart.

Lemon Blueberry Bars With Coconut Crust

CRUST

1 1/2 CUP FLOUR
¾ CUP FLAKED COCONUT
½ CUP BROWN SUGAR
½ CUP BUTTER, ROOM TEMPERATURE
1 TSP SALT
2 TSP LEMON ZEST

Mix all the ingredients in a food processor and pulse until combined. Press into a well-greased 9×13 baking dish. Put it into the fridge while you make the filling.

 FILLING

1 CUP FLOUR
1 CUP SUGAR
½ TSP SALT
¾ CUP (1 ½ STICKS) BUTTER, SOFTENED
3 EGGS
ZEST & JUICE OF 2 LEMONS
1 ½ CUPS BLUEBERRIES

In the bowl of an electric mixer, beat the flour, sugar, salt, and softened butter until combined.

In a separate bowl, whisk together the eggs, lemon zest, and lemon juice. Pour the lemon mixture into the flour mixture. Beat at medium speed until the batter is smooth and fluffy, about 2 minutes.

Turn off mixer, fold in blueberries by hand. Spread filling over crust. Bake for 40-45 minutes at 350 degrees, until the center is baked through and the edges are lightly browned. Let the bars cool completely before you try to cut them.

GLAZE

ZEST & JUICE OF HALF A LEMON
½ CUP POWDERED SUGAR
2 TABLESPOONS WATER

Wisk together until it’s all combined. Drizzle over cooled bars and spread around with the back of a spoon. Refrigerate until the glaze hardens. Eat and enjoy.

One of my favorite things about meeting internet friends is finding out they are EXACTLY the same as they seem online (and surprisingly, almost everyone I met has been). It’s even better when their KIDS are exactly the same as they seem online (spoken: adorable and charming). The cherry on top is when my kids are also adorable and charming and everyone has a fantastic day. The end. Well, except for this set of pictures of Kim’s kids being awesome with mine at Dinosaur State Park in Rocky Hill.

Kiawah Island 2011

If a genie came out of a lamp right now and offered me 3 wishes, they would all involve going back to the beach house on Kiawah Island and never ever leaving (after the wish for more wishes. DUH.) I would need the extra wishes to cover the bazillion dollars for maintenance and the electric bill and the toilet paper delivery guy. Because people who own beach mansions on gated islands can’t be expected to purchase their OWN toilet paper. If you happen to know of any genies looking for work, please send them my way.

(Totally unrelated side note except for the genie thing: we’re watching Aladdin right now with the kids for the first time as a way to ease back into home life and I am proud to report I can still recite all of it from memory.)

Leading up to this vacation, E was kind of…what’s a nice way to say “suffering from an epic eye-rolling condition?” I would say “Yah the BEACH!” and he would say “Blah, I hate sand.” I would say “I heard they have a fully stocked liquor cabinet!” and E would say “They sell beer in Connecticut.” I would say “It will be so nice to get away!” and he would sigh and say “But we have to drive SO FAR.” He was like Vacation Eeyore.

But besides a few screamy moments from the kids in the car – truly just a FEW and pretty justified on their part after so many hours strapped into carseats – it was the perfect vacation. It took E less than 10 minutes to be totally on board with the whole thing and become Vacation Dora The Explorer. “WOW! LOOK AT THIS POOL! IT IS GREAT! DON’T YOU LOVE THIS POOL? I LOVE POOLS! AGUA!”

I already mentioned that my friends were great with my kids, but it also helped that my kids were REALLY REALLY well behaved. All my (not unreasonable) fears about the toddler escaping the house and falling in the pool or running down to the beach proved unnecessary and he was more than happy to just hang out with whatever adult’s arms were currently empty. And besides the sleeplessness related to a brand new top tooth, Caroline was a tiny ginger angel who did nothing but coo and make doe-eyes at everyone. It FELT like a vacation, even with a 2-to-2 parent-child ratio, which is pretty damn amazing.

This here is the part where I post fifty bazillionty photos of the beach and the beach house and brag until you want to punch me in the face, so if you’re currently in your third straight year of never having a vacation that doesn’t involve sleeping on an air mattress while visiting your in-laws in Tulsa you might want to click away. I would totally hate you for going on this vacation too.
