What’s For Dinner? Volume 11

More dinner ideas, right here! I’ve been on the hunt for dinners I can make for the kids and myself that E can easily take out of the fridge and/or reheat when he gets home from work at 9.

1. Lemon and Herb Pasta Salad – Rachel Ray
2. Spaghetti with Turkey-Pesto MeatballsParents Need To Eat Too (I LOVE this cookbook!)
3. Chicken Andouille & Shrimp Jambalaya – Rachel Ray
4. Thai Chicken Pizza  – Me! I was out of carrots so I used cucumber. Still delicious!

5. BLT Pasta Salad – The Big Book of Backyard Cooking
6. Grilled Nachos – I bought this tray at Williams-Sonoma with my Christmas gift card and it’s AMAZING.
7. Chicken Satay Naan – Rachel Ray
8. Mango Lime Couscous – Idea from the Weight Watchers Points Plus Cookbook, but I ignored most of the recipe. It’s just whole wheat couscous cooked in vegetable stock, mango, red onion, cilantro, lime zest, lime juice and a little olive oil, all to taste. I served it with baked Cajun chicken.

I’ve been working towards changing my attitude towards food – redefining “good” food and “bad” food and what I’m “allowed” to eat – so suddenly a whole new world of recipes are open to me and I’m pretty excited. My friend Erin might even have sold me a little on the whole Paleo thing. She sold it with promises of bacon. At this point I feel like I’ve tried every diet in the world and they all WORK…but only until I get bored. I need to figure out what to eat forever.

    Anytime you want to try being paleo for a week I’ll make you meal plan and support tweet you every few hours. :)

    Some (partnered) friends of mine started doing Paleo. One of them is Plains Indian and THRIVES on it. The other is Palestinian-European mix and keeps bread at work to eat because Paleo doesn’t suit her as much. As with any diet, give it a go and see how you feel.

  3. I am on a hypoglycemic diet because duh. I am hypoglycemic. My nutritionist laid out ground rules which I follow for the most part. I combine it with common sense of avoid processed foods and high fructose corn syrup. I works well for me and is flexible enough for real life (including the occasional McDs and bacon).

    Side note: Do you take all your own food pictures? (They are amazing!) and Are you on for BlogHer Food? If so, I am totally there. I would really like to cook more and food blog. Anticipating the SAHMness, I feel like I will have more time in proximity to a kitchen to do things like that.

      I do take my photos, it’s something I’ve been working on for a LONG time now. Food blogging is like a hobby-within-a-hobby for me, and I absolutely love it. After this year’s BlogHer Original Flavor I’m going to start saving my ad and sponsor post pennies to see if I can make BlogHer food happen next year.

      • I am clueless (and google isnt helping), what is BlogHer Original Flavor? Save those pennies, if you make it to the Austin one we can hotel share!

          Bahahaha, I just meant regular BlogHer, the one that last year was in San Diego and this year is in NYC. Regular Flavor as opposed to Food or The Creative Connection/BlogHer hybrid. Sorry, my sense of humor is weird.

            I completely get it. I only was confused because flavor and food go together. That so sounds like something I would say. I also make up my own words which can be confusing.

  4. Will your kids eat the spicy foods? I’m impressed! I felt like Libbie used to be more tolerant of spicy foods than even I am, but now she starts screaming, “It hurts my tongue!!!” David just cries.

    So, no spicy foods, I have a lactose-intolerant toddler who just wants to eat meat and fruit (maybe he is Paleo) and a 3-year-old who – despite all my best efforts and whatnots – only wants to eat kid food – chicken (granted, she will eat it almost any way), pasta, pizza, sandwiches, PBJ. She eats a little bit of fruit. Oh kids.

      None of this was super spicy, luckily, since Evan is not a fan. (Caroline literally eats anything. She stole my entire bowl of spicy szechuan noddle soup for lunch and ate it with her fingers.) If a recipe calls for something like cayenne pepper or jalapenos I usually leave it out or decrease it. I also decided meals were not something I was willing to fight over constantly, so if Evan tries dinner and hates it I will let him have a hot dog or a sandwich. But you’ll notice this menu involves a lot of noodles and pizza :)

    Yay! Another What’s for Dinner post! I like #1 and #5 because pastas are usually my go-to easy dinners. Can’t wait to try them out.
